These cookies are a go-to of mine when I am uninspired and want something bright and fresh.
I love using anything with a combination of lemon, lime, and orange zest. These cookies are beyond buttery and smooth and so easy-peasy to make.
I promise you, you will love them as much as I do.
Ingredients
Cookies
- 1 large egg
- 2 sticks salted butter, softened
- 3/4 cup granulated sugar
- 2 tablespoons combined orange, lemon, and lime zest
- 2 cups all-purpose flour
- 1-1/2 tablespoons combined orange, lemon, and lime juice
Icing
- 1-1/2 cups powdered sugar
- 1 tablespoon whole milk
- 2 tablespoons combined orange, lemon, and lime zest
- juice from 1/2 lemon or lime
- dash of salt
Instructions
- Preheat the oven to 350ºF.
- Separate the eggs. Set aside the egg white for the icing.
- Using a hand or stand mixer, cream the butter and sugar until combined.
- Add the egg yolk and mix until combined. Add the citrus zest.
- Then add the flour until just combined. Next, add the citrus juice (your choice) and mix the dough until it comes together.
- Scoop out heaping teaspoons of dough , then roll them into balls between your hands and place them on a cookie sheet.
- Bake the dough for 12 to 13 minutes or until they are not quite turning brown. Remove them from the oven and keep them on the baking sheet for 3 to 4 minutes. Use a spatula to move them to a cooling rack and cool them completely.
- To make the icing, combine the egg white and the rest of the icing ingredients. Whisk thoroughly until combined, adding either more powdered sugar or more juice until it reaches a pourable but thick consistency.
- Drizzle the icing across the cookies in several lines, then repeat in the other direction.
- Sprinkle them with extra zest before the icing sets.
Citrus Butter Cookies
Using a mixer, cream butter and sugar until combined.
Separate an egg and put the egg white aside for later use. Add the egg yolk to the butter mixture and mix until combined.
Add 2 tablespoons of a mixture of citrus zest. Add the flour and mix until just combined.
Next, add the citrus juice of your choice. And then mix the dough until it comes together.
Scoop out heaping teaspoons of dough, roll them into balls between your hands, and then place them on a cookie sheet.
