Dark Chocolate Guinness Bread

What do you think of when you think of something Irish, in regards to food? My mind goes to potatoes, Guinness beer, Bailey’s, and shepherd’s pie.

This dark chocolate Guinness bread combines two of those things : Guinness beer and Bailey’s Irish Cream. And boy, is it delicious!

Chocolate and any dark beer go hand-in-hand, but this bread recipe is beyond incredible for anytime to, but a perfect ending for St. Patrick’s Day.

Ingredients

Dark Chocolate Guinness Bread

  • 1-1/2 cups all-purpose flour
  • 1/4 cup dark chocolate cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 cup butter, room temperature
  • 1/2 cup dark brown sugar, packed
  • 1 large egg
  • 1/2 cup chocolate chips
  • 1/4 cup walnuts, chopped

Bailey’s Irish Cream Glaze

  • 1-1/4 powdered sugar, sifted
  • 3 tablespoons Bailey’s Irish Cream
  • 2 teaspoons half and half cream

Instructions

  1. Preheat oven to 350ºF. Spray a 9 x 5-inch loaf pan with nonstick cooking spray, then set aside.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, salt, and white pepper. Set aside.
  3. Using a stand mixer, beat butter and brown sugar until light and fluffy, about 3 minutes. Scrape the edges of the bowl, then mix in egg. Add in beer and mix for 30 seconds, just enough to break apart the butter mixture into the beer.
  4. Slowly add in dry ingredients into the wet ingredients, mixing gently in between. When all dry ingredients are added, mix until just combined.
  5. Gently fold in chocolate chips and walnuts. Pour batter into prepared loaf pan.
  6. Bake for 45-55 minutes or until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes, then remove from pan and transfer to a wire cooling rack to cool completely.
  8. In a small bowl, whisk together the powdered sugar, Bailey’s, and cream.
  9. Once bread has cooled, drizzle glaze on top of the bread.
  10. Bread can be stored in an airtight container at room temperature for 5 days.

Dark Chocolate Guinness Bread

Preheat oven to 350ºF. Spray a 9 x 5-inch loaf pan with nonstick cooking spray and set aside.

In a large bowl, sift together flour, cocoa powder, baking powder, salt, and pepper. Set aside.

In a stand mixer, beat butter and brown sugar until light and fluffy.

Add in an egg and mix. Then pour in some Guinness. Mix for about 30 seconds until the beer breaks apart the butter mixture.

Add in the dry ingredients and mix until there are no visible pockets of flour. Fold in chocolate chips and walnuts.

Pour prepared batter into prepared loaf pan.

Bake for 45-55 minutes or until a toothpick comes out clean.

Let bread cool in the pan for 10 minutes, then remove from pan and transfer to a wire rack to cool completely.

In a small bowl, whisk together powdered sugar, Bailey’s, and cream.

Once bread has cooled, drizzle the glaze on top of the bread.
