Ingredients

Apple Bread

  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 small to medium apple, cored, peeled, and diced
  • 1/2 tablespoon cinnamon

Topping

  • 1/3 cup granulated sugar
  • 1/2 teaspoon cinnamon

Cream Cheese Glaze

  • 2 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1/2 teaspoon vanilla
  • 1/2 cup powdered sugar

instructions

  1. Preheat oven to 350ºF. Grease a loaf pan with nonstick cooking spray and set aside.
  2. To make the bread, combine granulated sugar, flour, baking powder, and salt. Set aside. In a medium bowl beat the eggs, milk, and oil until just combined. Stir apples in with the cinnamon in a separate bowl. Lastly, in a small bowl stir together the 1/3 cup granulated sugar and 1/2 teaspoon cinnamon for the topping.
  3. To combine, gradually add dry mixture to wet mixture until just combined. Fold in the apples. Spoon the cinnamon-sugar topping onto the loaf and swirl around with a knife.
  4. Bake for 50-60 minutes or until a toothpick inserted in the middle comes out clean.
  5. Cool on a wire rack. Meanwhile, make the glaze. Mix all glaze ingredients together until it is smooth. Warm in the microwave until the glaze becomes a pourable consistency. Drizzle over the top of the cooled apple bread.
  6. Apple bread can be stored in a sealed plastic bag or covered in plastic wrap at room temperature for up to 2 days or in an airtight container in the fridge for up to 5 days.
