This one is super easy, tasty, and perfect to have with some of those apples you picked from the orchard.
Ingredients
Apple Bread
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup milk
- 1/3 cup vegetable oil
- 1 small to medium apple, cored, peeled, and diced
- 1/2 tablespoon cinnamon
Topping
- 1/3 cup granulated sugar
- 1/2 teaspoon cinnamon
Cream Cheese Glaze
- 2 ounces cream cheese, softened
- 2 tablespoons butter, softened
- 1/2 teaspoon vanilla
- 1/2 cup powdered sugar
instructions
- Preheat oven to 350ºF. Grease a loaf pan with nonstick cooking spray and set aside.
- To make the bread, combine granulated sugar, flour, baking powder, and salt. Set aside. In a medium bowl beat the eggs, milk, and oil until just combined. Stir apples in with the cinnamon in a separate bowl. Lastly, in a small bowl stir together the 1/3 cup granulated sugar and 1/2 teaspoon cinnamon for the topping.
- To combine, gradually add dry mixture to wet mixture until just combined. Fold in the apples. Spoon the cinnamon-sugar topping onto the loaf and swirl around with a knife.
- Bake for 50-60 minutes or until a toothpick inserted in the middle comes out clean.
- Cool on a wire rack. Meanwhile, make the glaze. Mix all glaze ingredients together until it is smooth. Warm in the microwave until the glaze becomes a pourable consistency. Drizzle over the top of the cooled apple bread.
- Apple bread can be stored in a sealed plastic bag or covered in plastic wrap at room temperature for up to 2 days or in an airtight container in the fridge for up to 5 days.
