Hot chocolate pancakes. Need I say more? No.
These things are basically a good reason to have dessert for breakfast, but hey, it’s the holidays. Who is keeping track of calories this time of year anyway?
Ingredients

- 3/4 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- mini marshmallows

- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/3 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 large egg
- 1-1/4 cups buttermilk
- 2 tablespoons butter, melted
Instructions
- In a microwave-safe bowl, microwave the chocolate chips and cream in 30-second increments until melted. Stir until smooth and set aside.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together the egg, buttermilk, and melted butter.
- Pour the wet ingredients into the dry ingredients. Stir until just combined, do not overmix.
- Rest batter for 30 minutes, this really does not need to be skipped!
- Heat electric griddle to 350ºF. Spray with nonstick cooking spray. Pour batter by the 1/4 cup-full on to the griddle.
- Cook until the edges have set and bubbles have formed on top, 2-3 minutes. Gently flip and cook an additional 1-2 minutes until cooked through.
- Keep cooked pancakes warm in oven. Stack pancakes on a plate and top with the melted chocolate ganache and mini marshmallows. Enjoy!
