During the holidays, I’d eat just about anything gingerbread flavor and these pancakes are no exception.
They’re the perfect amount of spicy, sweet, and everything you could want in a pancake. Try em for yourself!
Ingredients
gingerbread spice mix
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 3/4 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cardamom
pancakes
- 2 cups all-purpose flour
- 1 tablespoons gingerbread spice mix (recipe above)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup applesauce
- 1/3 cup molasses
- 1-1/4 cups whole milk
- 2 tablespoons butter, melted
Instructions
- In a medium bowl whisk together flour, gingerbread spice, baking powder, baking soda, and salt.
- In a separate bowl, whisk together eggs, applesauce, molasses, and milk. Slowly whisk in melted butter.
- Slowly pour the dry ingredients into the wet ingredients. Whisk until just combined. Let batter rest for 5 minutes.
- Meanwhile, heat a large skillet or griddle over medium heat. Scoop about 1/4 cup batter for each pancake.
- Let cook on the first side for 2-3 minutes, until bubbles begin to form and bottom is lightly browned. Flip pancakes and cook for about 2 more minutes on the second side, until cooked through.
- Keep pancakes warm in a 200ºF oven while cooking the remaining pancakes.
- Serve with butter and warm maple syrup.
