Another day in March and another stout beer recipe. This salty, sweet, and decadent oatmeal chocolate chip bar is everything you need and more!
Ingredients
Crust
- 9 graham cracker sheets
- 2 tablespoons brown sugar
- 4 tablespoons (1/2 stick) butter, melted
Filling
- 1-1/4 cup old-fashioned oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1 teaspoon salt, divided
- 4 tablespoons (1/2 stick) butter, melted
- 1/3 cup stout beer, such as Guinness
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350ºF. Spray an 8×8-inch baking dish with nonstick cooking spray.
- Add the graham crackers and brown sugar to the food processor. Blend until just crumbs remain. While the food processor is running, slowly drizzle the butter until combined and the mixture resembles wet sand. Press firmly into the prepared pan in an even layer.
- In a large mixing bowl, stir together the oats, flour, brown sugar, granulated sugar, baking soda, and 1/2 teaspoon of the salt.
- Make a well into the center of the dry mixture. Pour in the melted butter, stout, egg yolks, and vanilla. Stir until just combined.
- Sprinkle the chocolate chips over the top of the crust in an even layer. Press the oat filling into an even layer over the chocolate4 chips. Sprinkle the top with remaining 1/2 teaspoon salt.
- Bake for 26-28 minutes or until top is golden brown.
- Allow to cool completely before cutting. Enjoy with a cold glass of stout!
