Frito Chili Bake

Do you ever need ideas to whip a really quick meal together in just a few minutes?

This is your meal! The kids love it, Aric loves it, and mama loves that there is minimal effort and clean up.

Overall, a win-win for everyone involved!

ingredients

  • 3-4 cups Chili Cheese Fritos
  • 1 pound ground beef
  • 1/2 onion, diced
  • 1 package taco seasoning
  • 3/4 cup water
  • 1-15 ounce can Ranch Style or pinto beans
  • 1 -10.5 ounce can cheddar cheese soup
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • lettuce, for serving
  • tomatoes, for serving
  • avocado, for serving
  • sour cream, for serving

instructions

  1. Preheat oven to 350ºF. Arrange Fritos in a 9×9-inch baking dish. Set aside.
  2. Brown ground beef and onions in a large skillet, breaking it up when browning. When cooked, sprinkle in taco seasoning and water. Simmer until water is absorbed and sauce thickens.
  3. Meanwhile, combine cheese soup and milk in a small saucepan over medium heat and whisk until smooth.
  4. Pour the ground beef mixture over the Fritos, top the beef with a can of beans, then top with the cheddar cheese soup mixture. Lastly, sprinkle the shredded cheddar over the soup mixture.
  5. Bake for 10 minutes until cheese has melted and is bubbly. Serve with lettuce, tomatoes, avocado, and sour cream.
