Ham Cups

Weekday breakfasts can be difficult and often can result in cereal or oatmeal. Borrriiinnnggg.

I am always trying to come up with new ways to make breakfasts more exciting and this is the perfect recipe for doing so.

Ham (or turkey) cups require no prep work, very little time, and reheat nicely. What more can you ask for?

ingredients

  • non-stick cooking spray
  • sliced deli ham or turkey
  • cheddar cheese, grated
  • eggs
  • salt
  • pepper
  • fresh parsley, chopped for garnish

instructions

  1. Preheat oven to 400ºF and spray a muffin tin with cooking spray. Line each cup with a slice of ham (or turkey) and sprinkle with cheddar. Crack an egg into each ham cup and season with salt and pepper.
  2. Bake until eggs are cooked through 12 to 15 minutes (depending on how runny you prefer your yolks).
  3. Garnish with parsley and serve.

Sprinkle each well with cheddar.
