Churro Waffles

Waffles are one of my favorite things to eat for breakfast.

I’m also really obsessed with eating sweets.

So why not combine the fried goodness of a churro with a waffle?

These waffles are a perfect mix of soft and buttery, with a delicious crunch of cinnamon and sugar.

ingredients

Waffles

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1-1/2 cups whole milk, room temperature
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup butter, melted

Topping

  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 4 tablespoons (1/2 stick) butter, melted

instructions

  1. Preheat waffle iron to manufacturer’s directions. Spray with non-stick cooking spray.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, make the topping. Mix together the 1/2 cup sugar and 2 tablespoons cinnamon. Set aside. In a small bowl or large measuring cup, beat the eggs together then add in the milk and vanilla.
  4. Pour the milk mixture into the flour mixture, mixing a few times, then adding the butter as you are mixing. Mix until combine and no visible flour can be seen.
  5. Ladle batter into prepared waffle iron. Cook waffles until golden and crisp. Once fully cooked, brush butter (the 4 tablespoons for the topping) over the cooked waffles. Immediately dip the buttered waffles and then dip into the cinnamon sugar mixture to top.
  6. Serve immediately with maple syrup and fresh berries (if desired), then devour.
