I think all Southerners like a good casserole, amirite? It just feels so homey, even though sometimes you are not entirely sure what’s in it.
However, this breakfast casserole is one of those that you can whip up the night before and then just pop it into the oven while you go about your business in the mornings. It is a perfect holiday breakfast too. And dinner. You know I’m all about the breakfast for dinner meals anyway!
You can also use frozen hashbrowns instead of tater tots, if you so desired.
ingredients
- 2 pounds breakfast sausage, regular or hot
- 1/2 onion, diced
- 1- 30-32 ounce bag frozen tater tots
- 1-1/2 cups cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 8 eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder

- Preheat oven to 350ºF. Lightly spray a 9×13-inch casserole dish with nonstick cooking spray. Set aside.
- In a large skillet over medium-high heat, brown breakfast sausage with diced onions, crumbling the meat as you go. Cook until the sausage is no longer pink. Drain off any excess fat.
- In a large bowl, toss the sausage mixture with tater tots and cheeses. Pour into the prepared casserole dish.
- Whisk together the eggs, milk, salt, pepper, and garlic powder in a bowl or large measuring cup. Pour over the tater tot mixture.
- If baking later, cover and refrigerate. Set on counter to warm up a few minutes prior to baking.
- Bake uncovered 60-70 minutes or until the eggs are set and the casserole is slightly brown on top.
- Scoop into individual portions and serve with some salsa over the top, if desired.
Tater Tot Breakfast Casserole
Preheat oven to 350ºF. Lightly spray a 9×13-inch casserole dish with nonstick cooking spray. Set aside.
In a large skillet over medium-high heat, brown breakfast sausage with diced onions, crumbling the meat as you go. Cook until the sausage is no longer pink. Drain off any excess fat.
In a mixing bowl, add some frozen tater tots and some grated cheddar and mozzarella cheese.
Add the sausage mixture and then stir to combine the ingredients.
Pour into prepared casserole dish.
In a large measuring cup, add in 8 eggs, 2 cups of whole milk, and season with salt, pepper, and garlic powder. Whisk until the eggs are smooth. Then pour over the tater tot mixture.
And make sure everything is evenly coated.
Bake uncovered 60-70 minutes or until the eggs are set and the casserole is slightly brown on top.
Scoop out in individual portions. We served with a piece of toast and fresh fruit.
It is also beyond delicious with some homemade salsa slathered on top.
